Is this knife better than a Shun? Please don't give me some "it's a personal preference" answer either! Thank you!

Absolutely not! Not many people like going into chemistry as I do but this would be a poor choice. Wusthof uses their own priority blend of high carbon stainless steel with a rockwell hardness of 56. The shun classic which is less expensive uses vg-max steel which has a rockwell hardness of 61-62. Add that on top of the fact that the wusthof has a slighter sharper blade meaning it's edge gets worn out much much faster than the shun. I would absolutely use the shun.
